Another random freezer rummage and another random white paper package labelled chuck roast.
Thawed it for 24 hours and decided it was close enough, so I seasoned with EVOOSPG and started the coals and a nice chunk of cherry.
Ran the kettle up to 250, placed meat on the indirect side and walked away.
Checked the temp after a couple hours and made a slight vent adjustment and hesitantly walked away. Checked back in 2 hours for another adjustment and coal addition. Set a timer for an hour and walked away. Returned after an hour and lifted the lid for an IT check. Put the chuck on direct for a sear before removing for the rest.
Turned out
far better than I expected!
