So today I had a potluck dinner with my extended family. As the smoker enthusiast of the family I was asked to bring a meat dish. This is what I ended up with.
I used the 3-2-1 method for 2 racks of ribs on my traeger, each where coated in Memphis Dust and smoked using hickory pellets. I cranked the heat just a bit during the 2 hours in the foil steam bath so that when they came out the bones pulled right out. Coated them in Stubb's Spicy BBQ sauce and let that carmelize. While i was doing that the wife toasted some loaves of garlic bread to slap them between along with some sweet onion and spicy pickles. This was amazing and I'll definitely be doing it again. Washed it all down with a few margaritas, and life couldn't get any better!
