Howdy folks! Tulsa boy now living a bit east of Catoosa.  Hope I didn't confuse anyone.  Smoking 15 yrs or so with conventional wood smokers (cheap ones), trying electric now.

Hey can I ask you a question. So I got a master built electric smoker. And decided to go big and got a 16lb brisket. Watched a YouTube video and was told it would take 20hr. Having people over tomorrow afternoon so I separated the point from the flap so it would fit. Almost 6 hrs into the cook and I'm at 156. Dropped the temp to 200 opened the damper full. Should I panic that it's gonna be done way early and plan to slice and gently reheat. Or have a drink and relax?

Welcome!

I was not nearly as ambitious. My first run was last week with a pork tenderloin.

I am new too, so I can't offer any help whatsoever.

But, welcome anyway...

I am sure somebody will offer some sage advice soon!
