Name is Andy live in York pa. I've been using a smoke hollow gas smoker for 10 years now. Just recently finished my custom build. I built a reverse flow offset smoker with warming box and set it up for tri-fuel. Gas,wood, and charcoal. Has removable baffle plates to allow for drum only cooking, cabinet only cooking or both at same time. Put my capacity at 24 pork butts at one time. Warming cabinet was built so that a full size chaffing pan will sit on shelves. Ran it all weekend, made pork butt, baby back ribs, pastrami, corn on the cobb.
