I m using Masterbuild Electric smoker, I m smoking Beef Jerky with mix Hickory and Mesquite at 160 for 4 to 6 hours. Question is Should I use chips all the way for 6 hours or limit to about 3 cups of chips will do.

DM1, I would only smoke for 2-3 hours max, It all depends on how much smoke flavor you want. I usually go about 2 on my jerky.
 
Thanks for quick reply, One more Question I need to know . I like my Jerky little soft so when I do bent test, if it bends a little then I can take it out and let it cool off, it ll get harder by then, right?  If doesn't bend at all and it ll be much harder when cooling off??

You are absolutely right about the jerky getting harder (firmer) as it cools off. I need to remove mine when it still has some bend (or squeeze) to it and then it firms up perfectly.
