1 hour in on the spatchcock chicken. my go to way to smoke a chcicken. Using my oklahoma joes. Going at 260-265 for now. Trying a new rub i made. Should turn out nicely.

This is the rub im using. Should be good.

1tblsp salt
1tblsp pepper
1tblsp onion powder
1 tblsp garlic powder
.5 tblsp cayanne
3tblsp brown sugar

Man that is almost my secret seasoning minus the brown sugar lol.

I don't know how the sugar will affect the overall flavor but the other seasonings alone will guarantee a grade A flavor for sure!  I think you will wind up with something good :)

Turned out great. Nice crispy skin, juicy meat. Cant ask for much more than that. Got a little darker on the color than i wanted but overall a nice tasty bird.
