hi everyone,

I'm new here to this site so please forgive me as I'm sure this topic has probably been covered before to some extent.

I have used my Outback Signature 6 burner gas grill for doing low and slow (with a woodchip smoking box) for some time now, but I have now decided I want to BBQ properly.

I have been convinced so far that I want to do things properly, and was looking at buying an Oklahoma Joe Highland offset smoker, and then modifying it slightly to improve the smoke retention/performance.

However, thinking more about this, and the fact I want to try and do quite a bit of smoking going forwards, I am now thinking that maybe an electric smoker might be a better option. Part of the reasoning behind this is down to the great British weather. I was thinking originally of being able to smoke under a pop up gazebo/canopy or a marquee type structure but am a bit worried about the smoke damaging the gazebo/canopy if I have to smoke under cover if it is raining. This led me to think maybe an electric smoker, set up in the garage, might be a better option.

Or could I used an offset smoker under the gazebo/canopy, and adjust the exhaust stack so that it exits outside of the gazebo?

I would be very grateful for any ideas, sugggestions, thoughts etc.

Many thanks in advance.

Each smoker - wood, electric, propane - has its pros and cons.  I used an offset, not unlike the Oklahoma Joe - for years before I went electric due to age and laziness. Great food every time, but as I got older I was less enthusiastic about doing long smokes, especially overnight.  Electric takes care of the long smokes.  First a CookShack and then a Smokin-it. No regrets.

Read the posts here; use the search feature for a particular brand electric.  Visit the wood or charcoal section and search there as well.  You will get a lot of good information, pros and cons. It will come down to what you are going to want to use often.
