It's a beautiful memorial day to fire off the smoker. Thanks to those who gave their lives for our freedom.
Today I decided to fire off my favorite cooker to do a 12 pound brisket.

Snake method topped with pecan and hickory. A 3/4 circle of charcoal will peg my kettle out at 260 for approximately 9 hours. I'll have to add some more charcoal later today.
I like to keep my briskets simple. Kosher salt and course ground pepper is the only seasonings I use. The snake method is almost set and forget. About the only work I'll have to do is turn the brisket every couple of hours to keep the fire out from under it.
 
Looks good!! What size kettle are you working with? I'm guessing the 26 if you have room for the beans!! Happy smoking!
It's a 22". I wrapped the brisket and finished it off in the oven to make room for the rest. I didn't feel like firing off another cooker since I'll have 2 dutch ovens going also.

Some people say just 2-3 chunks per smoke but I feel like that's never enough
That's what they say but I'm with you. I had beans to smoke after I pulled the brisket so I needed the extra chunks anyway.


Lotta food there. Everything looks delicious! The brisket, the beans, the spuds, and desert ALWAYS look great.
