When I saw the heading, I thought perhaps you smoked a fattie and then used that in the stuffing. I always make stuffing with some breakfast sausage, onions, celery, pine nuts, butter, bread (of course), and chicken stock and/or milk for the moisture. I've been thinking of smoking the meat first which might produce a very interesting result.

I guess I'll do a quick search and see if someone has done this before ...
