Hey I got a discount on a whole beef brisket that was split in two. I have never done a brisket before and need some help getting it trimmed up. This picture shows the part im trying to trim. I have the fat trimmed the way I think it should be, however there is ridge that is sticking up on the meat I'm not sure what to do with. Do I trim it or leave it on. Thanks in advance
