So I am making a brisket. 

This was not in my plans today but I have to keep the wife happy. So this is an 11 pound Brisket with just Salt and Pepper. I started it 

I started it at 2:00 pm (a bit late in the day but again this was not on my list of things to do today).

Here it is at 2:00 pm


Here it is at 5:30 pm - IT 151°

The only thing planned for the day was yard work so it all worked out. Now just over 6 hours in and holding say 170ish.
 
It hit 200 at about 9:30 so i let it sit for an hour an had to cut a piece to test. It came out fantastic. Melted in my mouth.

I will slice up the rest in a bit it is dinner tonight.

Ok, Last post, Here it is all sliced up. I have to say this is probably the best brisket I have made. There are many tests that people do to judge their brisket but just the other day I was watching Franklin Barbecue. He held a piece and under its own weight it hold together but then with just the slightest pull it comes apart. and the taste is pure beefy goodness. 

Going by this it is perfect (at least to me).


Started with the plate and realized I needed a bigger plate. So here is the 2nd plate.

Thanks for the kind words this one was really a hit with my wife and son. We all agreed the best one yet.  

TXsmoke89, I tried for 250° but kept it as close to 275° as I could. My smoker (Oklahoma Joe) seems to hold pretty steady at 275° once I get it going.

link if that's the results you get with a last minute brisket, you should be demanding last minute requests all the time. That brisket looks fantastic.

​JD, I am sure it will, Good luck and relax while smoking it. It is a good excuse to stay home and not do too much. You have to tend to the brisket you know
