First attempt at a brisket.

Local grocery store had a great sale on brisket ($3/lb) so I picked up a 9lb to try for my first.
I rubbed it down last night and put it in my MES30 at 945am. Started it at 230* and bumped it up very gradually to 275*
5.5hours into the smoke I'm t 170* internal. I'm going to attempt to smoke to 200* without wrapping, but will if necessary.

Looking great. You have a good bark. What's your IT? I like to wrap mine at 175 so they power thru that last 25 degrees or so.
 
I am not spritzing. The top stayed nice and moist for the first 4 hours or so, and then it turned to a nice bark.

My internal just hit 177* and I decided to wrap it, since it started to stall out.
 
That looks awesome!

Can still see the grain so know which way not to slice. Can't wait to see the end result. That's going to be some good eating!
