UDS Pork Butt Way Ahead of Schedule

I put a 13lb bone in pork but on the UDS at midnight, figured it would be ready for a late lunch. Here it is 9:30 am and the internal temp is already at 190. the 733 thermo has been showing a grate temp of 235
Why is is so far ahead of the hour to hour and a half per lb ?

They run that way sometimes. I just saw another thread that the guy wants to know why his butts, at 250, keep going 24 to 30 hours. The most likely issue, double check the therm for accuracy...JJ
 
It happens, it may slow down from here, but if not, just wrap it in foil & put it in a 170 degree oven & it will stay hot until your ready to pull it.

You may also want to move the probe around to a couple of other places to see if it's all at 190.

If not then leave it where it is the coldest.

Used my ThermoPop to probe other areas to verify what the Maverick was reading. 

Just never had one done so far under 1 hour per pound
