Few weeks back i did 2 racks of St.Louis style ribs. Did the tried and true 3-2-1 method and they turned out phenomenal! Smoked 3 hours using apple chunks at 225° 2 hours wrapped in foil with a little apple juice poured into the foil and then the last hour on the grate just heat and putting sauce on at the 30 minute mark. Didnt take any pictures except for the final result but since im a newbie to the forum i thought id share.
