Kiawe wood? I have a chunk someone sent me, how would you describe the flavor?

Set your temp alarm before bed just in case you have a fast runner

I love it. To me it's between hickory and Mesquite.

I have the alarms set.

234 smoker temp and 156 IT on the point right now.

Ha. Not yet. IT 160.

This is rolling through. We are in a flood watch. Damn.

UDS still holding 230. Maybe my mav is broke. Lol

So at 7 am it was cooking for 12 hours.  IT of 154.

Kinda looking dry.

So I put in a pan and foiled with some liquid.

At 1 pm it was probe tender at 205IT.

Wrapped in foil and towels then into a cooler.  Might try to make burnt ends yet.

This is bout 1/4 basket left yet.

RO briqs out performed KBB by a long shot.

Its 3:40 and its still at 234 degrees.

Back with more pics later.

Adam your having some good eats today. Looks like it all turned out awesome.
Just glad the UDS didn't float away last night.

When you said you were in a flood watch, all I could see in my mind's eye was you chasing your UDS through the water yelling "GET BACK HERE. THAT'S MY FIRST BRISKET!!!" [emoji]128514[/emoji]

Great job Adam. It looks fantastic.

Judging from all the meat you smoked you must be feeding an army. And feeding it real good.
