Well the wife said she wanted a smoked/reversed sear ribeye steak for Memorial dinner.  We made a list and she went off shopping as I had a long honey-do list.   This is what she came home with.   A prime 2.69 pound/2.5 inches thick cowboy ribeye from our local butcher.  The butcher is a good friend and Navy veteran like me.   He told my wife it is "on the house" for the Master Chief (Navy term for senior enlisted) on Memorial Day.   He is a great guy and knows I will find a way to pay it forward.

Anyway I have never done a steak this large or a prime rib (this small LOL).  I am thinking about 1.5 hours at 225 or until about 120 internal then maybe 5 minutes a side at high temp for medium rare?   Trying to get timing down for dinner, will this work?  Thx in advance.

We did not get hit but no power sucks when it is 88 outside and high humidity!!!   We will survive and there will be more meat to smoke.  Too bad that beauty of a steak went to waste.
