So pulled a pack of spare ribs and baby back ribs out of the deep freezer. 

Im thinking of smoking them for 2 hours at 200 with some rub then into the VS bath for 24 hours at 160......  Or maybe lower temps with more smoke time?

Will take some pics as we do it.  Any thoughts?
 
24-26 hour ribs? I'm interested in how this turns out. I see the lower temps. Curiosity is high on this.

I think I would smoke them a little longer before the SV, it will give you a better smoke flavor.

Ok so maybe 180F for 3-4 hours of smoke?
 
Four hours starts to concern some people due to the general rule of no longer than four hours when the meat is between 40-140. I do it but we can't make recommendations that are outside the FDA guidelines...

I would think at 180 on ribs they would be well above 140 in 120-180 minutes....
 
I've toyed with the idea of doing pork ribs in the SV, but haven't tried yet. I know beef ribs come out great. I guess I've been waiting to see someone else do it....
I'm watching!
 
cool sv is a neat tool id smoke them till you like the colour  on the ribs  regardless  of the time on the smoker   then finish them off sv  cant wait to see the results though
