Hello everyone. I was wondering how important, if at all, it is to spray meat with some kind of water or melted butter while smoking it? I mean if the water pan is maintained then there should be plenty of moisture within the box if I'm not mistaken. Any and all advice is greatly appreciated.

A lot of questions pop into my head before I can offer you a useful opinion...what type of smoker being the foremost question.

I have an MES40 electric smoker and do not use the water pan or spray any of the meats I smoke because my smoker is so tight that moisture loss/dried-out smoked meats is not an issue.

No need to spray or mop unless you just want to. I don't use a water pan in any of my pits. One of the pans is full of sand, one pan has a stack of firebrick in it, and one is just empty.

I just bought a masterbuilt extra large propane gas smoker.

Spritz/mopping is done at high temps, >300°F. When low and slow smoking, Spritzing adds moisture that slows the temp rise and every time you open the door, you add 20 minutes to the cook...Waste of time...JJ

Sometimes I like to mop my ribs with a combo of BBQ sauce & apple juice.

It makes a nice bark.

That gas smoker should recover quite quickly, when the door is opened.
