Water trays

I have a Lang & the firebox end runs about 10-15 degrees hotter than the other end.

If I put a pan of water on the grate next to the firebox the temps even out.

I also think you get a better result with a pan of water in the smoke chamber.

But I'm sure you will hear many other opinions, both for & against a water pan.

I would try it with & without & see what you think.

What's the advatge of keeping a water try in a offset smoker? And how important is the location of it?
I think it helps keep the meat a little more moist personally.  In my smoker, I have a homemade damper between the Fire Box and Cooking chamber to make the hole smaller and help redirect the heat. I put the water pan directly on top of that which has helped level off the temperature between the 2 sides of the Cooking Chamber.  It is one of those things that you will have to test and see what works best for you and your smoker.
