How far in advance can you trim the fat????

I am smoking two 10LB picnic hams for memorial day weekend down the the shore.  I am going to be a crowded house so i would like to get a lot of the prep work done before i get there.  My question is how far in advance can i trim the fat?  Normally i do it the night before and then inject it but i was going to do it tomorrow and inject it & smoke it Friday night.  Is that too far in advance, does it matter?  Any help or suggestions are appreciated.  
 
I would think if you keep the meat cool you could take of the skin and trim some fat a couple days ahead of time. i dont really see the need to inject a piece so fatty. every picnic i have done has tons of marbling. so you could pull the skin trim as much as you like and keep cool/on ice until cook time and don't worry about the injection. and then low and slow(or hot and fast) till about 205 IT and shred/pull for good eats. No issue at all trimming a couple days ahead. Smoke the skin too. If not used in beans or greens, your's or your neighbor's dog will worship at your feet...JJ
 
Thanks guys, trimmed them up quick last night and kept the skin to make cracklins for the first time!!
