Hello all,

Originally from Milwaukee (the land of brats and kielbasa) but now living in Sacramento, just today I got a used electric Brinkman smoker off of Craigslist for $40.  I cleaned her up and am smoking chicken quarters over apple wood as I type this.  Look forward learning more from the more experienced members here.

They were OK for a first go.  My heat went to 250 at which point I fiddled with the setup and lost a lot of heat in the process. Went down to about 150-175 and never really recovered after that.  They were underdone close to the bone, and I had to finish them on the grill.  Total cook time was little over 2 hours, though perhaps that is not long enough for chicken ...  I feel like most people have trouble keeping the heat low  enough -- I was having trouble building it up.  Does this take a while with the electric Brinkman?

My chips smoked out twice.  I'm using a smoker box directly on the lava rocks.  I soaked the chips initially, but didn't expect them to burn up so fast.  I added some more hastily soaked chips -- these burned up quickly, too.  

Any ideas or tips would be most appreciated.
