I was cleaning out my spice cabinet , and found a small 1 oz. package of Salt cure packaged March 7 2012. It has salt and 6.25% Sodium Nitrite.

If IT is NOT good , where can I buy small amounts of curing salt for smoked sausage. going to try making around 5 lbs of the smoked stuff.

Thanks Dan

DB, I would think it would be fine as long as moisture hasn't made it one large clump. You can buy cure #1 from any sausage making company or Amazon .

That stuff never goes bad as long as you keep it dry.

Still good as long as its not clumpy or has moisture in it. It may loose the pink tint but thats just tint.

The Gander Mountains near sell LEM cure, which is Cure #1 in a 4 oz bag.  Mine might be older than yours.  Still good.

I found some of mine had a use by date on it. I was cautious, not knowing if it went bad or not, and it was about 2 yrs past the use by date. I didn't throw it away, but didn't use it either. Wasn't clumped, so I suppose it is still good?
