A thread about mayonnaise preferences on the Ohio Game Fishing board pushed me over the edge and I took my first try at making it this morning. I read several recipes online, which did not always agree with each other, so I decided to wing it.
I started with two room-temperature eggs, a chilled bowl, a slotted spoon and a mixer with only one beater attached.
Then I separated the yolks.
I gently mixed these with about 1/8 cup of cider vinegar and a bit of salt.
Then two restaurant packets of Chinese-style mustard
Then I began to mix in the oil. I needed both hands for that, so I had to pause to take this pic.
I'm guessing my mistake was to add it too quickly at first. Anyway, RRRRRRRRRRRRRRRRR with the second beater installed.
It never set. I added two more eggs, no difference. The appearance, flavor and mouth feel are all good but it's the texture of a slaw dressing. So I stopped adding to it, and just seasoned it as a slaw dressing, with some garlic salt, a half teaspoon of sugar, and some powdered ranch dressing mix. More RRRRRRRRRRRRRRRRRR. Now it's time to chill it and go slice up some cabbage.
