I saw a video for these and had to try them, I was really happy with how they turned out. A little bit of messing around but really easy to do!
I cut each chicken thigh in half to make smaller appetizer ones.

Thighs cut, opened out, seasoned and filled with pepper piece and cream cheese.
Folded closed, wrapped in bacon, placed in muffin tin to hold shape and topped with rub and butter
In the smoker at 300° smoked over cherry
Removed from muffin tin and dusted with rub
Dipped in homemade BBQ sauce
Pulled 10 minutes after BBQ dip

They tasted really good too.
I'm not a huge fan of cream cheese but apparently it holds together during cooking much better than other cheeses. I found this to be true, barely any melted out.
Also the BBQ sauce was a bit thicker that I wanted. When it's hot it's supposed to get thinner so when dipping the chicken it gets a light coating and the excess runs off. Next time il water it down a little.

At 300° 40 minutes uncovered then cover with foil for 20 minutes. Take off smoker out of tray, dust with rub put on rack and back on smoker for 15 minutes, dip in BBQ sauce put back on rack and in smoker for 5-10 minutes.
