So I took some advice and loosened the skin from the breast.  This made a huge difference.  I also did slaughter house brine for about 36 hours.  It was really good.  265 and took about 3 hours for the 6# breast.  Going to wait until Thanksgiving a do a couple along with my classic oven turkey.
