I've seen several great threads on this and decided to try it this weekend for Mothers Day. Has anyone ever tried to do the first smoke one day and then let the meat sit overnight, then do the cubing and finishing the next day? Would this work? How do you think it would best be accomplished?
I feel like I may be running short on time Sunday, so would like to do as much as possible beforehand so I don't have 20 people glaring at me while my smoker chugs along...
