It's been a while since I've made any bacon but I found some nice pork bellies at my sams club and I was so excited because they have never had them and I check every time I'm in there. So I measured out my cure and figured the right amount of days. BUT I misread the recipe and did 1/2 TBS per lb instead of 1 TBS per pound of tenderquick. I didn't realize it until today when I took it out to rinse it. I sliced to see if the cure had made it to the center and it had not. I added the rest of the tenderquick and put it back in the bag. So my question is now what? Is it ruined? Leave it for the right amount of days all over again? I really don't want to waste the bellies because they are impossible to find around me. What do I do?

Wow that's tough I don't know how to answer that and don't want to miss lead you I'm sure someone will be around to help you soon. I would like to see how this gets answered I have my own idea and want to see if I'm right.

The first round of cure killed the bacteria. It is already safe. Adding the rest of the cure will finish the job. You should go most of the way if not the full number of days because the cure is , again , on the surface and has to get to the center. Essentially you are starting over....JJ

I stand corrected. Thanks JJ

Hot smoking is not a bad idea as after staring at that bacon a week or more, l would have a hard time waiting longer. [emoji]128512[/emoji]...JJ
