BBQ Pork steaks in the St.Louis area.Really? If you see it without any additional description, just "BBQ pork", does it ever mean anything else?
As already asked, what are you serving?
How is it being served, plate or sammich?
Is this lunch or dinner?
As already asked, are these people lumberjacks, office geeks, women's sewing club or peewee football?
Sides? If it's really simple, like a sammich, small bag of chips and a drink, you may want to contemplate larger portions per person.
Always count on everyone eating one, a few people wanting seconds, several people dropping theirs and need replacement, a burnt or otherwise inedible butt.
60#s is not enough in my opinion, you'll lose 25%-30% of the raw weight
Figuring minimum 8oz per person, 65-70#s would be my minimum.
65-70#s MINIMUM emphasis added to added emphasis :biggrin:I'm with ChileRelleno on this one. Those butts do tend to shrink, and there will be some waste, fat, and inedible parts, especially if you're buying bone-in. Better too much than too little. 65 to 70 pounds minimum.
Especially as the only protein available. Much better to have leftovers than left outs.65-70#s MINIMUM emphasis added to added emphasis

^^^^^this^^^^^^1/3 pound cooked weight per person. Figure 40% yield for bone in pork butt.
That's 33 pounds cooked. 75 pounds raw weight would put you right in the ball park.
All assuming you are serving sides.
We can't all be perfect @Kuddles. Some of you can't help it that you're Texans.
Lol. Truthfully when it comes to BBQ, I love the variations you get from different regions. It's one of the great things about BBQ, there's not really a "wrong" way to do it. But of course a good brisket is my favorite.

Can't disagree. I think off all the different BBQ out there a perfectly cooked brisket is probably my single favorite thing but of course there's always pulled pork, or smoked chicken with white sauce..that might be my favorite, or mmmm BBQ.
