Hello! I'm just getting started with smoking meats, but I'm looking forward to some great food. I've got a gas 36" Smoke Hollow smoker, and for my first batch I've got 4lbs of pork shoulder in it now. I'm using Oak wood chips, and plan on making pulled pork sandwiches out of it for dinner. I know I've got a lot to learn, but this site looks like a great resource. I'm hoping to make brisket, turkey, who knows what else. 
 
Thanks! The pork turned out pretty good yesterday. 


It was a little dry, but still tasted great. I'm going to look into ways to keep more humidity in the smoker.
