Hello all. I am from Saskatchewan, Canada. I recently bought a Traeger Pro 34 and have done a couple meals on it -ribs and chicken. I am very impressed with how moist my whole chicken was and the apple pie had the best crust ever! I am researching how to make bacon from scratch and that is what led me here. It looks like this is the place to be to get all my answers as I really know nothing about smoking meats of any kind and there looks to be a wealth of information on here! I will be burning the midnight oil for many night to come I think!. I've read a bit and need to figure out what Cure #1 is. We have Morton's here and not sure what Cobela's has. 
 
McOnt 5, welcome to SMF!  Glad you are here and finding answers.  There is a lot of experience to address any needs you have.

Cure #1 is also known as Prague Powder #1 or InstaCure #1.  Cabela's Speed Cure is also a #1 cure.  All three are a curing salt with 6.25% sodium nitrites.  People often refer to it as Pink Salt for short, but there is actually a Himalayan Pink Salt, which is just plain salt.  Curing salt cannot be eaten directly and must be kept away from table salts to avoid confusion.

Morton's Tender Quick is a different type of curing salt.  Here is a thread that explains the difference.

Thank you for the info. So would you say Tenderquick is better than Pink salt or vice versa. It seems that Tenderquick is sought after by people who live where it is not available, and I assume Pink salt is available to them?
