Little sister and I are putting a roof on my dad's house, and since we THOUGHT we had help coming today, I put a couple of butts into the big vertical yesterday afternoon.
I put the hybrid smoker to good use yesterday afternoon and last night.
I put the butts on at 4 pm with the basket about 1/2 full of charcoal and pecan chunks, that hovered around 240 until close to 10 pm when the temp started falling, so I opened the door, pulled the basket, and inserted the heating element. Set the PID to 220 and went to bed. The last time I saw the butts was a little after 10pm. When I went to the pit this morning at 7:30, they looked quite done, and a quick poke with the instant read showed them to be at 206, worked for me!
The bride came in the kitchen and wonder d out loud if they were overdone, I reached over, grabbed a bone, tugged, and when the meat fell apart, she just made a face at me over the top of her coffee cup.
They both shredded nicely, panned up good, and tasted great as I sampled while shredding.
Sadly, we were too hot to eat lunch today, but we probably will tomorrow. However, I didn't take it ALL to the farm, so now I'm making some of my Pulled Pork Gravy so I can have a plate later this evening.
Oh, we only got half done today... Not bad for an old dude and his baby sister.
