Picked up another packer at Costco on the way home from work Friday.  Lately I've been slicing the flat and turning the point into burnt ends.  I had two chuck shoulder roasts in the freezer so decided for something new and different to use one of them - time for brisket point and chuck shoulder burgers!

Just can't beat the price on Prime grade packers - this one is just under 12 lbs pre-trim:

Here is the flat all rubbed up for the smoke tomorrow:

Trimmed most of the large fat from the point, now starting to cube (obviously don't need to add extra fat to this mixture):

Wife actually got this for half off the "woo hoo" price, been in the deep freeze and needs used:

Everything cubed and mixed - seasoned with the same SPOG:

Currently in the freezer getting ready for the KitchenAid grinder, more to come!

First burgers were delicious - should have done this much sooner!  I had to do this indoors as we keep having rain / some hale out of the blue.  Added a little sliced smoked colby to make it smoke related

Have a good night all!

Looks great! Do love a good burger.
Thanks Lance, decided to post something different for a change - I guess burgers can be different?  LOL.
I bet those were some juicy burgers, looking good from my point of view.
Thanks CR, family deemed them a success.

Those burgers look fantastic!

Great job!

Thanks much Al - the best part of the whole process is that I get a smoked brisket flat today!
