So I'm about 6 hours into smoking a pork shoulder. I'm using indirect heat method in a CharGeiller gas/charcoal combo. (No side fire box). Temp has been around 260-280. I just checked IT and it's at 180, and I haven't wrapped it. The shoulder/butt is 8.5 lbs. this seems really fast to get to 180, so what should I do?
 
You are right on schedule for that smoker temp. It should be done,205, in about two hours or so. If too early? You can wrap in foil and towels then place in a cooler. It will stay hot about 4 hours...JJ

Also....realized today that I shouldn't leave my chimney next to the bag of charcoal, especially when it's still hot. Almost burned the house down!

Wow, that was almost one expensive lesson! I've been a charcoal'er for decades. A neighbor's garage went up in flames when he discarded charcoal in his trash can a day after use. Since then, I put ALL used charcoal and ashes in a metal bucket with a lid and leave it there even though I know it is cold. No fires except for cooking.
 
You got very lucky! Glad to hear all is ok.  Don't do that again.

Once it hits 205, pull and let it rest on a cooler for at least two hours like Jimmy said..  Wonderful things happen during that period.
