I'm using a char-griller triple play smoker.

I have all the vents open, and the offset door open a bit to. I've used what feels like too many coals, but temp won't arise above 200.

Any ideas? I smoked a brisket last night, and it tasted amazing, but I never did get the temps right.
 
First of all, welcome to SMF!

How are you measuring your smoker temp?

If you are using the factory gauge it could be off by 50 degrees or more.
