WSM as a grill

I have seen people use the WSM as a grill by removing the center section and placing the grill rack over the coals on the bottom section. I just saw another way to do this though and was curious if anyone has ever tried it or what those with experience think about this method....

Instead of lowering the cooking grate....raise the coals. Put the coal grate on top of the secondary(lower) grill grate with the charcoal ring and light it there and then continue to cook on the upper grate.

Now to me, that would mean I would need to buy a second lower grate as I would not want to use that grate for food anymore.

What do you think? Is it a good option or do you think I run too much risk with it? Such as falling and whatnot.
 
It sounds to me like it would work.

The only thing I see that may happen is the food grate may warp a little due to the high heat.

The charcoal grate is much heavier metal, so it will withstand the heat of burning charcoal.

I never thought of that....I wonder if they sell bigger coal grates then? Currently I do not think the coal grate will span the entire gap.
 
I grilled that way for years on my 18.5" and never had a problem. Also, if you're just making some burgers and dogs and don't that close sear, just build your fire like normal and remove the pan. Excellent burgers with no flair ups.
