Longtime Lurker, new member here. Been hunting since I could walk. Been cooking and smoking meats for about that long as well. I have 3 deer and 6 wild hogs in the freezer that will be processed soon (Had to finish my new smoker build first.

Venison Cajun smoked sausage

Wild hog Cajun smoked sausage

Wild Hog Chaurice fresh sausage

Venison sage breakfast sausage

Wild hog Maple Breakfast Sausage (Jimmy Dean clone of my own creation)

Also have some ducks that will be made into smoked Portugese Linguice Sausage

might even make some wild hog bacon too.....

I have plenty of authentic cajun recipes-anything from crawfish to nutria....redfish to fresh tuna.

I also have some wild turkey legs and thighs which I will heavy smoke with apple wood. They make great gumbo, pot pies, and dumplings!
 
Indaswamp  - Welcome. I live in Houston and drive through LA via IH10-IH12-IH10 five or six times a year for the past 40 years. That is another story. Gotta love the food and culture and always wanted to learn more about how folks made common stuff great. Looking forward to your cooks and recipes.
 
I have been requested to post an authentic Jambalaya recipe, which I will do soon. I have a lot of recipes catalogued on another website, but not sure how SMF feels about posting links to other sites.

For now, here's applewood smoked wild turkey legs and thighs....
