Hey all!

I just make my first batch of venison summer sausage and venison pepperoni sticks last weekend! I'm addicted already. I'm hoping to get more experience and try new things. I've always loved salami, so that will happen some day. I has a MES smoker and love it. LEM grinder with stuffing tubes. 

My first attempt was using Spokane Spice Company premix and all the girls at the office loved it. Even my special gal asked for seconds. I'm going to try new variations as I get time.

Welcome aboard and your sausage sounds great.   That is something I have never tried.  I get it from a friend and love eating it but have tried to make it.  Lazy I guess.
