The wife asked me this weekend if we could smoke a chicken for Sunday's dinner and I asked her if that was a serious question because you're dang right we can.

Brined for 24hrs
Air dry in fridge for 20hrs
Little EVOO, SPOG and Cajun. Smoked at 300ish for 2hrs. Breast finished at 168 and thighs at 178. It was very moist, tender and tasty!. Did not go crazy on the sides as It was a meal my 10month old ate as well.
