Since buying the Yoder the WSM has been sitting lonely in the corner of the garage. Breaking it out today for some baby back's. Due to the fuel cost of bring the Yoder up to temp and cooking, I think the WSM may be the better tool for a single slab of ribs anyway.
I am typically a St. Louis style rib person, but that may be because I have smoked so many of them I can do them well. I have only done 2-3 cooks of baby back's.
Today I am doing a modified version of Al's perfect rib recipe. I would follow it to a "T" but Im using materials on hand.
First things first.
Rinsed, trimmed, membrane left on (first for me), mustard coat, rub coat then set for a few hours to get happy.
As usual with my posts Ill update as it comes along .. My plan is smoke for 3 hours at 225-235, foil for 1 hour then finish on my Genesis S-330 over indirect heat
