Don't get to smoke and post as much as I like lately but I did a hearty smoke this weekend and thought I'd post some pics. 



Of late I have gotten into trying new rubs, brines, injections and such. I used a couple new arrivals today so I there's a little mini-review tucked in to this post as well. 




I have used the Original Chicken Injection by Kosmos and liked it. Decided to try Their Woodfired version. Also, Tried their Garlic Parm Wing Dust. 





Been experimenting with Lump of late in my UDS and PBC. Thought I would give B&B a try since I have been less than happy with Cowboy lump after 2 smokes. I have used these a few times but thought I would give them shout-out. I have liked everything I have gotten from Oakridge BBQ. They make outstanding rubs. The Killer Hogs rub is good too. I used a combination of these 2 on the butt. 





I actually used a little of the Kosmos Chicken Injection mixed with some Butcher BBQ for pork. Both at less than half strength. Just to get a little extra flavor in the butt. 





All rubbed down with equal parts of the above mentioned rubs. 




I smoked it just like this with the rack on top of the half pan.






Smoked the butt overnight with the B&B and a decent amount of small apple chunks. Smoked at 235* starting at ~10:30. Woke up around 6:30 and put it in the pan with just a tad bit o apple juice and apple cider vinegar to add a little flavor to the drippings and covered it with foil. I let it go until it hit 205 and checked the tenderness and it probed without resistance. Transferred the butt to a fresh pan and re-covered with foil and wrapped that in a couple of towels. I didn't want it to cook any more but just stay warm enough for a couple hours. I did not put that in an ice chest. 








Prepped some wings using the combo of Oakridge and Killer hogs





Fired up the PBC for the wings





Prepped a yard bird with some of the Kosmos Wood Fired Chicken injection and shot up the breasts. The applied liberal amounts of Tony's. The wife likes the bird off the PBC but does not like sweet rubs on her chicken. That's why I used the Tony's. No Sugar. 





When the wings were done I removed them and promptly applied liberal amounts of the Kosmos Garlic Parm Wing Dust. Then I put on the yard bird with some un-shucked corn. (If you haven't tried this with corn you are missing out. It is easy and cheap and tastes great. It will not get much if any smokiness into the corn but it tastes fantastic)






Couldn't wait for the chicken and corn to be done cause I was starving. So I unwrapped the butt and pulled out the bone. 





Whipped up some finishing sauce made from some of the drippings, some apple cider vinegar and a little brown sugar. Pulled some pork with me hands as it was so dang fall apart tender and splashed some finishing sauce on it in a bowl and mixed it up a bit. Went slightly Tex-Mex on it since I didn't have buns. Tortillas work well for this. Corn was ready so I had an ear as the side. 





Some butter and Tony's on the corn. 





After I shoved food in my pie hole I got my golf clothes on. I left instructions for the better half to let the bird cool and put everything in the fridge. Played 18 (don't ask what I shot) and the weather was damn near cool as a front musta come through. Got home, showered and ate all over again. Damn, weekends suck....... cause they only come once a week!!!



Verdicts:



Cosmos Wood Fired Injection= A


I did use it at nearly full strength on the bird. I know some folks don't like the phosphates in some of the commercial injections but damn they work. I like them for chicken breasts. Really moist breast. Adding a little to the butt injection worked well too. 



Kosmos Garlic Parm Wing Dust= B


The package says to apply as soon as they are done. I think I may add it a little before so it has a few minutes in the smoker to kinda cook on there. It added a nice garlic parmesan flavor as advertised. 



B&B Lump= A


I like this stuff. I used it in both the UDS and the PBC. I checked online for some opinions before buying and the only complaint was that it popped and crackled a bit. I did't have problem. Maybe subsequent bags and uses might snap, crackle and pop, but last night and today it was fine. I liked the size. There were still some small pieces as you would expect but mostly medium to med-largish pieces. (by comparison the Cowboy had no larger pieces in 2 bags that I have tried-just small pieces that burn quick and fall through the basket holes)  It burned all night and through the morning enough to cook a pork butt and I had enough left over to put in the PBC and that filled the PBC basket about half full (the PBC basket is a smaller than a typical UDS basket). I used tongs to grab the burning chunks and put them on some fresh B&B in the PBC. This gave me a fairly hot PBC which was what I was going for on the wings and bird. It ran the PBC between 310-325 for a couple hours and there was still a good bit left when I was done. I think the B&B may be a little more expensive than RO lump and Cowboy, but definitely worth it relative to the Cowboy lump. I will give RO lump a shot at some point and see how it compares. But I like this B&B.



Oakridge Secret Weapon Pork and Chicken rub= A


If you haven't tried Oakridge's Rubs you are missing out. They are quality rubs. I have tried several and use the Black Ops Brisket Rub often. 



Killer Hogs The BBQ Rub= B-


This rub is good but seems to have a lot of paprika perhaps. It seems to add some color to the food. Not bad necessarily. It is a tad on the sweet side. I have used in on ribs and it works well. Worked well on the butt combined with the Oakridge. This stuff is good for pork. I would not use it on beef, but you never know. It may work well for beef, it just doesn't seem like it would. 



I would and will use all of the above again. All good stuff.
