1st Pork loin, gonna try a Mexican stuffed version

I'm gonna try a pork loin tomorrow, and i thought I'd share my ideas and if anyone has anything to add or any advice, I'd appreciate it.

Thinking about butterflying it and stuffing it with the following:

Mixing jalepeno cream cheese, garlic, onion, jalepenos, chipotle peppers, and cilantro in the food processor to make a spread to apply first.

Then ground and browned chorizo (the raw sausage type, not the Spanish hard version), red and orange peppers, chopped.  Then some shredded cheddar and maybe some green chilis.

Not sure what to do for a rub.  Maybe just some taco seasoning? Will serve with Spanish rice and my wife's homemade tortillas.

I'll be cooking it on my GMG, 225 or so until it hits 140-145.

That sounds good BUT why go all out on your first.

Maybe get two.
 
I'm going to cut it in half and freeze the other half for another attempt.  Depending on how this one turns out, I'm thinking an Italian version with pepperoni, mozzarella, peppers, etc....

Nice 1st attempt with some hard to blend flavors, getting the chemistry right with all that is tough.
That and chorizo is an acquired taste and throws many off a bit it they don't already like it.
Personally I would have been allover it, I love chorizo.

I think the chorizo was ok, but I think I overdid it with the onion and garlic. Also, I thought the chorizo would add plenty of fat, but I didn't turn it so it didn't distribute the way I'd hoped. I think a rotisserie would've helped. No worries though, I have another half to work with. Either way, always a good day when I get to fire up the grill!
