I'm new here. What is the reason for wrapping the finished meat in aluminum foil and towels and placing in cooler? I was thinking your meat was finished ahead of time and you're keeping it hot prior to guest arriving. Does this also serve to keep meat most? Thank you.
 
If the meat is Done, you reached a desired internal temp or a probe slides in with no resistance, and guests are ready to eat, there is no need to foil and go in a cooler. If the meat is done and you need time, the cooler buys you several hours, keeping the meat hot...JJ
