Did some boneless skinless chicken thighs tonight in the smoker. Used a rub and let them sit overnight sealed up in a vacuum bag.
Got the Mes fired up and put them in. Using a mix of cherry and apple pellets. Pulled them out when they were around 140 and added on the sauce.

Let it go till it hit 170 and then pulled them.
It was a good dinner tonight.
Had with it a angle hair pasta with green beans to go for the veggie Yep. Dinner was good.

Thighs are Miss Linda's fav but mine is breast. I've tried smoking them together but by the time the breast is done the thighs are ruined.

Yours look so good I guess I'll just have to bite the bullet and do a whole meal of thighs next time.

POINTS for this one. Miss Linda will send her love when I copy your plan. I never thought about rolling and using butcher twine on each thigh.

Thanks everyone for the kind remarks. The seasonings were also more noticeable on the inside since they were rolled up. Thought about stuffing them with something before smoking but wasn't sure with what to use in them so I just left that alone for the next time. The butchers twine worked good. The inside stayed moist since there was hardly any fat to them and no skin to hold in the juices.
When I coated them in the bbq sauce I did it how one coats wings. I put them in a big bowl and then added the sauce. Every thigh got coated heavily by doing this. Turned out good this way. The mix of pecan and cherry pellets added the right added flavor to the meat.
 
Straight up BBQ chicken is so highly underrated. Seems like a timeless classic that has faded away for so many other methods and foods. Points to you sir for keeping the cluck alive! Looks delicious!
