Yesterday was one of the first days of the year here where I was off AND it wasn't storming or really cold (just really windy), so it was time for some flappers. In the morning I applied my rub, refrigerated for 2 hours & then sacked'em up with a salt & buttermilk brine for a few hours more in the 'fridge. I went with a combination of hickory & peach woods & smoked them at 275 degrees. I used my homemade sauce to hit them up with near the end & stuck them under the broiler for a few minutes to tack them up real nice. I also did up some twice-baked potatoes & got them in the smoker with the wings as well. All was good.

Smoked hot wings are something on my next to cook list w some ABT's. Never done twice baked potatoes. Will definitely try the buttermilk soak!

Your wings look fantastic!

We have twice baked potato's all the time, I don't know why I never thought to smoke them.

Next time I will definitely do that!

Point!

I love doing the wings & brining them keeps them from drying out.

Thanks guys. This is about my favorite way to do potatoes. I also like doing corn or mac & cheese in the smoker.
They look good...nice smoke!!
Thanks HC. I appreciate it.
