Easter Double Smoked Ham with Q-view

Had a big family get together at my wifes parents, and as they make the most bland food on the face of the earth, I jumped in quick and volunteered to do the main dish (a ham in this case).


I picked up a smoked, un-cut ham from the local grocer. Grabbed the biggest one they had. Got it home and trimmed off the outer fat and skin. Rubbed her down with some Dijon mustard (I did a thick coat so that the flavor would be part of it). Then rubbed it with my own rub, which is pretty similar to Jeffs rub, but also has Colombian Coffee grounds in it.


Threw it in the smoker using the Applewood Kingsford briquettes (which I don't really think do anything different than the plain ones really). After an hour, I also put in some chunks of Cherry that I get from a local place because I didn't smell a smidgeon of smoke flavor from the briquettes.

After about 2 hours 45 minutes, i began glazing the ham. Th glaze i used was as follows:


-2.5 cups Brown sugar

-1/2 cup stone ground mustard

-1 can Dr. Pepper

-1 Tbsp of my rub

-3 Tbps Apple Cider Vinegar

-1/4 cup Blues Hog BBQ sauce


*Reduced in a pot for about 25 minutes till it was good and thick.


I applied the glaze 5 times over about 40 minutes, then pulled the ham and put it into a cooler cause dinner was at the in-laws. I put it in so that nothing was touching it, and it had enough weight on the bottom to not tip during the drive.


I actually didn't really get a final pic, cause it was a dash out the door once i was done. These were at the second to last glazing. It got nice and thick, and this was BY FAR, the best ham i have ever had, which was also the general agreement of all the party guests. I got the idea for the glaze from the food networks "Pioneer Woman" and that will be the glaze i use from here on out.
