Gotta get back in the ball game. 

Got some Elk defrosting, dont know what i'm going to make yet. Maybe do a charcuterie and grind the rest for some sausage.
And a small belly for pancetta.



Just when you thought it was safe to go back in the water....HA
 
This is just shy of 4lbs of elk. Dont know what i'm going to make yet.

I do a bleed out over night with game meats.
