I'm doing a 9 pound Pork butt today for my first smoke.
Using hickory and mesquite chips. Hope all goes well.

Good luck!

 

Pork butt is pretty forgiving & hard to screw up.

 

I don't foil mine I just let the smoke roll until they hit about 205, or until the bone will wiggles free.

 

You can check for doneness with a toothpick or probe.

 

It should slide in with little to no resistance in several places.
