The grain of the meat on this brisket is pretty steep. So by taking a pic of it before I smoke it I'll know where to start slicing once it's done.

Some will eye roll, but many of us have assumed wrong with the first slice or 3 in the past.

Again, great cooks think alike, I do this too sometimes.
But forgetting to do it means eating those burnt ends on the cutting board... Oh darn. :biggrin:
 
I agree with both of you!

I did this for a couple of new folks that asked about slicing brisket.

The rule in my house is that I get the point end cut and the first slice from the flat!
 
I usually just bend it a little & the grain pretty much shows itself.

But in some cases I do cut a corner off just to make sure.

The photo seems like a great way too!
