Brisket is one of my (thangs) and now smoking has got me into curing and making my own meats and other goodies.
I use a smoking Tex modified with a controller, Smoke meat temp alarm, and I just purchased a OJ offset vertical with a small grill on the smoke box I will add a fan and use the controller on this unit also!!
Recently I have made pastrami via curing my own corned beef and then smoking, and bacon via curing. I make burger from brisket and chuck, sauauge from pork in Italian flavor and breakfast flavor. I make snack sticks from chicken breast and brisket to keep them lean.
Just here to learn from the masters!

I should have mentioned I use the same controller on both units

Is there a meat curing forum here? I have some bacon I have questions about the cure times!
