How long do you let the actual smoke roll

My question folks is how long do you let the actual smoke roll for a pork butt? I got my thermometer probe set for IT of 205 but how long do you let the actual smoke roll? I've been told that too much smoke will be bitter and I've smoked a little on a grill with smoke packets prior to getting my smoker. I have a Landmann Smokey Mountain gas Smoker. I just don't want my my pork butt to come out bitter. Thanks in advance for the help folks.

As long as the smoke is nice thin blue smoke & not thick white smoke.

You can let the smoke roll the whole time.

I always have smoke rolling, unless the meat is in foil.

Of course on my offset I have smoke no matter what.

Yes....same here! You just don't want that white smoke, that is what makes the food taste bitter.

The time any product is smoked depends on three things, the color, and density of the smoke along with your taste. Keep good notes on all three and experience will give you the answer you are looking for.

It's a SMOKER! If you are only going to add smoke for a couple hours. You might as well use your oven. The guys are accurate. Light smoke a long time gives the best flavor. There are times a short burst of heavy smoke is useful, shimp and scallops are an example, but more than 30-60 minutes and heavy smoke makes bitter food...JJ
 
I used to smoke butt for six hours and then foil and turn off the smoke. Now I don't foil and smoke all the way through. The results are slightly different but I like smoke the whole time. Try both and see what you like!
